I put the new cast iron skillet to work again tonight to make this loaded deep dish veggie pizza. I topped some Trader Joe's whole wheat pizza dough with green heirloom tomato, red bell pepper, black and kalamata olives, red onion, broccoli and jalapenos. Next time I'll up the ante on the cheese a little bit, but overall, I'd say this was a successful edible experiment!
This evening I combined chopped chives, garlic, breadcrumbs, lemon zest and ground lamb to make some delicious lamb burgers in my new cast iron skillet (thanks Renee & Matt!). I topped the lamb burgs with a slice of gouda and some spinach and fresh mint leaves that were tossed in a quick lemon dressing. I've said it before and I'll say it again... lamb > beef!
In tonight's experiment, I wrapped a wild halibut fillet in some prosciutto that was lined with a tad of horseradish mustard and some fresh thyme then grilled it. I sat it next to some garlic & herb couscous and some steamed asparagus and savored every bite.
I used most of Alton Brown's stuffed tomato recipe tonight. I rehydrated some dried morel, shiitake and porcini mushrooms in some white wine then cooked them with some diced tomatoes, onion, garlic and shallots then tossed it all in some heirloom tomatoes that I had cored then dried with a tad of salt. That got topped with a goat cheese/parsley mix then broiled with the oven door cracked for a few minutes. Best stuffed tomatoes yet...and this time they're vegetarian!
I took a tilapia fillet and floured it, brushed it with chopped parsley, garlic and egg wash then tossed it in panko bread crumbs, parmesan cheese and some other sassy spices then pan fried it. This tasty fish was paired with some balsamic & parmesan roasted cauliflower and a cold summer ale. Scrumptious!
I cut me up a sockeye fillet to make these Panko-Sesame Salmon Nuggets on a salad topped with some crushed red pepper and homemade avocado vinaigrette. I'll definitely make this one again.

This is no loaf of bread, my friends. This is Mr Alton Brown's pork wellington recipe and I must admit, it was the cornerstone of a perfect fathers' day meal!
I do breakfast too!! This is my latest morning creation: a spinach and bacon frittata topped with some colby jack, cheddar and mozzarella cheeses. Its BACON!
This is the broccoli cheese chowder from EatingWell.com with a few spice adjustments made by yours truly. Probably the greatest soup I've ever created. Beats Bread Co's without even tryin!
I breaded a wild Chilean sea bass fillet with some crushed red pepper and panko bread crumbs then pan-fried it and topped it with some apple slices that I sauteed then tossed in agave nectar. I added in some steamed broccoli to get some greens then I proceeded to gobble down this meal in approximately 25 seconds. Delicious!
These are my tasty broccoli calzones! I stuffed some Trader Joe's pizza dough with some broccoli, corn, scallions, pizza sauce, smoked mozzarella, smoked gouda and pepper-jack cheese and tossed them onto my pizza stone till they were golden.
I followed most of EatingWell.com's Okra & Chickpea Tagine recipe, except I didn't use a tagine and I used sweet chili sauce instead of harissa. I plopped it on some couscous and enjoyed another delicious vegetarian meal.
I quickly micro-steamed some snow crab legs with some sprigs of fresh dill and paired it with some homemade garlic-parmesan mashed red potatoes and some grilled corn. DILL-icous!!
Tonight I used most of the Cajun Crab Croquette recipe from EatingWell.com and put it with a baked yam stuffed with some mashed avocado and some steamed asparagus. Crab-tastic!
I steamed some mussels with an heirloom tomato, garlic and wine sauce and served it with a mix of peas and roasted carrots and some fresh jalepeno cheddar bread. Great soppins!
I tossed some wild cod strips in an ancho chile sauce I made then broiled it and put it on top of some homemade guacamole, shredded green lettuce and broken up blue corn taco shells. Paired it with some refried black beans and a cold brew. Damn good fish taco salad!!
This is my latest shot at asian cooking: I pressed, marinated, lightly breaded and then pan fried some tofu. Then I stir fried scallions, snow peas, bell peppers, broccoli, carrots and bean sprouts, added some egg noodles and tossed everything in a homemade orange sauce. Best tofu yet!
I brined, rubbed and grilled a chicken breast, then sliced it and laid it on some Hot and Sour slaw from EatingWell.com. Deeeelicious.
I pressed, marinaded and then cross grilled a slab of tofu then served it with a Mediterranean chopped salad and some steamed, salted edamames.
Portobello mushroom stuffed with chopped spinach, green onions, ricotta and parmesan cheese paired with a grilled salmon steak and a fine glass of pinot grigio. Good Eats!

This is EatingWell.com's Chile-Crusted Scallops with Cucumber Salad. I give the flavor a 10/10 because I almost doubled the minced Serrano peppers, but despite searing these lil guys perfectly on the grill to get a crisp outer layer, the texture of sea scallops still bothered me a bit. For that I'll give the overall dish a 6/10. Methinks I'll stick to bay scallops next time but at least Kelsey liked it!
Last night's portobello burger with homemade avocado sauce and some other goodies piled on top. I used most of a recipe from theamazingavocado.com but added some extra spices and doubled the avocado/mushroom ratio. I'll definitely make this one again.
I dished out EatingWell.com's Savory Orange-Roasted Tofu & Asparagus onto some egg noodles. Quality vegetarian meal!
Black bean croquettes on a bed of fresh tomato-avocado-cilantro salsa. Pulled this recipe from EatingWell.com but made a few adjustments to take the spice level up a notch or 10. I like calling them 'Black Bean Cornballs' instead of croquettes. Sound more fun.
Plated Good Eats 'baked mac n cheese' with a grilled marinated pork tenderloin and green beans cooked in a foil grill-pouch. I love my infrared grill!

This was the "Barbeque" mussels recipe from EatingWell.com. I added a lil too much red habenero hot sauce this time methinks, but it was still REALLY good.
The pre-cooking pouch setup for the red snapper. I followed the Good Eats recipe from the episode 'The Pouch Principle' for this one. Our friend has been stuffed with lemon slices, cilantro, parsley, red onions and then surrounded by cherry tomatoes, artichoke hearts and some couscous. Stapled him up in a parchment paper pouch and then introduced him to my oven. It wasnt much of a site after cooking so I dont have a pic, but gotta tell you...it was delic!

This was my first stab at cooking mussels. I steamed these lil suckers over a white wine garlic sauce this time. I think I'll wait til I have a stick blender before I make this one again. It'd really help to thicken that sauce up a bit with some cream.
We make these almost once a week. Great way to load up on veggies. I don't think I'm ever going to use that turkey pepperoni again tho. Waaay too processed.
