1 gallon of mead fermenting. I started with "Joe's Ancient Orange Mead" recipe which calls for:
3.5 lbs clover honey, 1 orange, raisins, 1 cinnamon stick, 1 clove, 1 tsp bread yeast, and optional nutmeg or allspice plus water.
Instead of the above, I added:
3 lbs buckwheat honey, 1/3 lb Sucanat, 1 minneola, dried currants, 1 clove, 1 tsp Lalvin 71B-1122 yeast, crushed half of 1 nutmeg, and 1 whole allspice plus water. I'll call it "Jeremiah's not so Ancient Minneola Mead."
