So. My pork belly has nbeen sitting in it's cure all week, getting a daily flip, massage, and pep talk. Yesterday, I washed off all the cure, dried it with paper towels, and put it the fridge to dry for 24 hours. This is what came out yesterday evening.

I've smoked some rather complex stuff with my humble Weber Kettle and a coffee can. If I want to do whole slabs, I'll need something bigger.
These are hickory chips that have been soaked in water for a while.
I put the chips over the coals, along with about 200 rosemary needles and the wood to which they were attached. You don't want lots of heat so the charcoal is only 2 or 3 pieces deep.
Still going. The clock on the camera is still on Beijing time, so it's actually 21:40. I got very sleepy after this, loaded up the can with the rest of the chips, and went to bed.
Et Viola! This is what I had in the morning.
I put it the fridge for a few days to let the smoke finish penetrating. I think Sunday breakfast will be interesting.
