Gotta trim the fat and skin off the meat.

Save the skin and bone, but not the extra fat and conective tissue.

Cut up meat for ease of cooking.
If you think you need to wash your hands. Wash them. If you aren't sure if you should. Go ahead, it won't hurt. James is very particular about food prep.
grrr strong man.
lookit that beautiful browning meat. He added onion and garlic extra to the recipe. They both cooked down to nothing. Serious, we couldn't find any.

Jay's pico. Yumyumyum fresh and crunchy and limey and good.

How to make boxed taco shells not taste like complete crap. They tasted alot better and less plasticy after this. Just till they are warm, even toasted.
the boy doesn't own a rolling pin, so that's a can of kosher salt. It leaked a bit, but ended up working out well for them.
Pretty pretty tortillas
And we set them up for presentation'
