Sap collects in buckets.
Then we store it in large containers. When ready to boil down we strain it to remove debris.
Strained sap is poured into an evaporator - a metal pan.
You add a couple inches at a time to maximize boiling.
The evaporator sits on a makeshift foundation of cement blocks, a fire is made underneath.

Pre-warming containers are included on each end to pre-heat the sap before it goes into evaporator.

We finish it off inside so we have more control over the finished product. Its boiled until the temp reaches 219 degrees - at this temp it turns to syrup.
Finished product is then canned.
