Peter Hall: Sias University Foreign Faculty Dormitory
Sias foreign faculty are generally well-fed. The food photos were taken from April 2 through April 8, 2009, as part of a faculty survey of food preferences. They include most main courses, but not most of the side dishes like bread, butter, jelly, peanut butter, salad, fruit, yogurt, coffee, cocoa, etc. Foreign teachers occasionally submit their favorite recipes, which sometimes end up on the menu. Once we had a full time American chef, who introduced some of the more popular items, though most are no longer on the menu. There is no cross-training of kitchen staff, so when a chef leaves, he takes his recipes with him. Photos by Gary L.
