It all starts on a beautiful day out of Seward, Alaska.
Dale and Scott are cheerful, even though it's pretty early in the morning. Most of us arrived in Seward only hours ago.

That's a lot of halibut. The sea has been generous today, for sure!
Once home, it's time to process the fish. Doug clued me in to coating the fillets with lemon juice before vacuum sealing them. This keeps the 'fishy' smell at bay and keeps them from dehydrating (freezer burn).
I needed a large working area.
Starting to cut them up into about 1 lb. fillets.
We each got a little bit of the monster fish. These generally are not considered as good as the smaller halibut, as the meat takes on a mealy texture. We had some big steaks to cut up.

Cooler full of meat draining into the kitchen sink. It took all day to finish processing all the fish. My freezer was full - I was able to give some away and trade for some salmon.
