Sourdough just pulled from the fridge, warming for an hour with light on in oven. The other bowl has Anadama bread in it. Kitchen was really cold.
Set on counter to rise for 4 hours to start with. This is after the initial hour in oven.
One hour later.
It rose for several hours, then I shaped it into a baguette shape and cut it into four rolls. I pinched the cut ends closed and let it rest for ten minutes.
After the rest, I stretched them out (gently tugged till they lengthened) then stuck them on parchment paper to rise on pan. They are covered with plastic wrap sprayed with oil.
Ready to go into oven, I will use a razor blade or knife to cut a slit in top of roll.
Helps to use oil on blade.
I use egg white with about a tablespoon of water to coat my rolls.
Here they are, nice big puffy!

Turkey, onions, mushrooms and monterey jack cheese. Man were these good.
