Before the "real" wine list are a few pages of wines sorted by prices... most wines on this page are great, we had the Riesling Kabinett, a great match with the langoustines and the asparagus, and a really great wine

Absolute Senderens signature dish, finally back by popular demand. This dish is rather unchanged from the Lucas-Carton years, but for the Canadian lobster. There's a spinach and a thin ravioli dough slice, and mostly a very rich and thick vanilla sauce, based on champagne and cream. This is such a great recipe.
Asperges crues et cuites, sèche et caviar -- I don't really like Asparagus but this dish, again, is classic Senderens and it is absolutely convincing.
More vanilla lobster
Foie gras in a Chinese soup -- that's a great idea, it works very fine, but it is not as great a dish as other Senderens foie gras, such as the vin jaune one (see blog). It's typical of the Senderens bistrot style -- it's got the wit, it's very good, but it's not an experience beyond the surprise and the quality of the foie.
Extraordinary pig, thin crispy skin, absolutely tender. Leeks underneath are a great counterpoint, they're almost burnt, preventing the dish from being too sweet and fat. And some mango dices, bringing peps.
