Foie gras de canard, on polenta, textbook delicious, brilliant sauce
Soupe aux truffes VGE -- the truffle is underwhelming but the soup, a beef stock, is just perfect, and the same is true of the puff pastry. Where else can you get those? Seriously, where?
Loup en croûte, sauce choron -- it does not matter to have puff pastry twice when it is that good. The sauce Choron (=béarnaise with tomato) also worth some reassort, and the mousseline de langoustines that was inside the fish and is now hidden under the puff pastry has pistachio in it and is like an extra goodie. Just a great dish.
Volaille truffée en vessie - this is a good as you'll expect, plus the vegetables are truly awesome and the Sauce Suprême is just sooo good. The rice is a bit better than it looks but still hard to justify.
Canard colvert à l'orange, pommes soufflées, girolles -- I never understood that canard à l'orange was a great recipe before. That's because I never had with wild duck.
