Kinda Sorta Pasta alla Carbonara
There is no one so resourceful as a hungry person who does not want to go to the store. Here’s what I made with the stuff I had on hand.
2 T butter
½ c chopped onion
½ c chopped hard-smoked salmon or salmon jerky
½ cup fresh or frozen peas
½ c nonfat Greek yoghurt (like Fage)
1 egg, beaten
hot cooked spaghetti or other pasta
pepper & salt to taste
chopped parsley for garnish
Parmesan cheese
Melt the butter in a skillet; add the onion and saute until translucent, then add the salmon and peas and saute a few minutes more. Combine the yoghurt and egg. Turn off the heat under the skillet. Whisking briskly, add the yoghurt mixture; keep stirring so the egg doesn’t set. Toss in hot pasta, season and serve with grated Parmesan.
