Martinelli - Eggplant Parmesan
Martinelli's recipe for eggplant parmesan ... twas excellent ... twill be making this again ... Ooooooo Gesssss
Here is the recipe:
peel the egg plant
slice a little less than 1/4 inch think
so they are rounds
in a paper bag a large one
put in 2-3 cups of flour ( I used 1.5 cups and had some left over .. )
salt pepper garlic parmesan cheese
any good spices
put all the slided egg plant in
shake it up to cover
in a large bowl mix 6 eggs with some water and scrambled
heat in a large skillet w/ oil
have a baking dish ready to place the cooked eggplant
coat bottom with some tomato sauce
take eggplant disk form bag fully coated and dredge in egg mix
into oil in pan
cook till golden
flip
place in pan
shingle in pan and cover with a little or a lot of sauce your choice
sprinkle each completed layer with some parmesan
make layers and all done
if you want, and add more cheese like parmesan
