I had to be adventurous and get a taco de buche, which I thought was going to be cheek meat from a cow. Turns out it was pig's esophagus. Needless to say I got myself some carnitas after a bite or two.
Taco de buche. Too gummy for this gringo.

Pitaya (cactus fruit) sorbet. Complex flavor profile, sort of sweet and sour.
